Mayak Eggs

 

Splash of white vinegar

Pinch of salt 

7 - 9ish eggs

Ice and water for ice bath

1 cup soy sauce

1 cup sugar (I like ½ white ½ brown sugar)

Lots of minced garlic and chili flakes (idk, like 3 cloves of garlic and 2 Tbsp. chili flakes, you choose)

¼ cup water

1 Tbsp. sesame oil

Some sesame seeds

Some green onions



Add salt and vinegar to a pot of water and boil eggs for 6 minutes. Be careful to place the eggs

gently in the pot so they don't break. Once done, transfer into an ice bath to stop the cooking process for softer, jammy yolks. Set aside. Mix soy sauce, sugar, garlic, chili flakes, water, sesame oil, and sesame seeds together and stir until sugar has dissolved. Carefully crack and peel all the eggs under running water to make it easier. In a large container place your eggs in one layer. Pour marinade in with the eggs and add the green onions. If you want even coverage of the marinade on your eggs, put a paper towel on top to soak up the marinade and cover the top of the eggs. Let it marinate in the fridge for at least a couple hours before serving with rice, or just by themselves.


Probably eat these within a week so they stay fresh! Use the extra sauce to add to other asian

dishes.

Spicy Spiral Cucumber Salad


6 - 10ish mini cucumbers

1 - 1½ Tbsp salt

1 clove minced garlic (or garlic powder, idk, measure with your intuition) 

Some green onions

1 Tbsp. Rice vinegar

1 Tbsp. Chili flakes

1 Tbsp. Sesame oil

1 Tbsp. Brown sugar

1 Tbsp. Sesame seeds


Rinse cucumbers and cut into spirals by placing a chopstick on either side of the cucumber and slicing cucumbers diagonally (most of the way through cause the chopsticks stop you from cutting all the way) then flip the cucumber over and make straight slices. I like to make the slices thicker so there's more room for error. Put cucumbers in a bowl and coat with salt. Let them sit for about 15 minutes so the salt draws out extra water and makes them crunchy. Rinse with cold water and pat dry. Add garlic, green onions, rice vinegar, chili flakes, sesame oil, sugar, and sesame seeds. Mix really well and enjoy!
