Sounds fresh and good Ash- simple and easy too. What do you recommend as a main course with this? Is it more Italian-y or Mexican-y?

I would have to say the dish is a bit more on the Mexican-y side. kel's tortilla chips suggestion is great. I also was thinking you could have this with quesadillas or enchiladas.
